Chicken and spinach amounts were not stated in the video; estimated at 1½–2 lb chicken and a few handfuls of spinach. The video lists 1 tbsp salt for the chicken and another 1 tbsp for the sauce, which is unusually high; start with less and adjust to taste.

Ingredients

Instructions

  1. Toss the chicken with avocado oil, smoked paprika, rosemary, Cajun seasoning, garlic powder, onion powder, and salt.
  2. Add the chicken to a hot skillet and cook for about 15 minutes, or until it reaches an internal temperature of 165°F. Remove the cooked chicken from the pan.
  3. Add the chopped peppers and onions to the skillet and sauté until softened.
  4. Stir in the tomato paste and cook it into the vegetables.
  5. Pour in the half-and-half.
  6. Season the sauce with Cajun seasoning, onion powder, garlic powder, smoked paprika, and salt.
  7. Stir in the Parmesan until melted and the sauce is creamy.
  8. Add spinach and let it wilt into the sauce.
  9. Cook the mafaldine according to the package directions and drain.
  10. Return the chicken to the sauce, then add the cooked pasta.
  11. Toss until the pasta is thoroughly coated. Finish with chopped parsley.
